More baking!

More baking!  Can you tell I'm pregnant?    :)

On one of the warm days we went for a walk and the children picked dandelions.  When we got home we decided to use 'em up.  So we made dandelion cookies (found the recipe in a free download from Herb Fairies - we do not use their program).  And they turned out alright.  They were super flat and needed something special.  Maybe cardamom next time.  Or fresh vanilla paste?  Worth experimenting for sure.

Turning lemons into...

Not lemonade! 

This week I had a much anticipated second interview for a job I really wanted.  As it was in training not in education, I was a bit conflicted.  It did not offer summers off and time to take my kids to dentist appointments, but it made up for that in salary and benefits.  So when I got the (really nice) rejection letter, I was quite disappointed.  So how to turn lemons into lemonade?  Literally? 

R and I whipped up a (my first ever) batch of wine (lemons and oranges).  I had been collecting dandelions, but missed the initial crop.  So I modified the recipe I found here.  Instead of a gallon of dandelions, I used my pathetic amount and added in dried rosehips and dried elderberries.  Should be interesting.  I have about $50 invested in wine making materials and less than $3 in this first batch.  And it should yield a gallon of wine... in 6 months.

Garlic-lemonade tea

So, once again, my head cold has turned into a sinus infection.  *sigh*

In addition to the neti pot (sinus rinses), I'm drinking this tea (my own recipe adapted from one read in a book)...

Garlic-Lemonade Tea

2 (or more) garlic cloves
Juice of half a lemon
1 Echinacea-Elderberry Tea bag
Enough honey to make it palatable

Thinly slice the garlic and add it to the strainer.  Juice the lemon and pour over the garlic.  Add the tea bag (or loose leaf).  Pour in boiling water.  Steep as long as possible, but serve warm.  Add in enough honey to make it go down.

Breakfast for dinner

So, on Thursdays we either eat leftovers or breakfast for dinner.  On my diet, this is the only day I eat eggs. 

On this night we had scrambled eggs with spinach and garlic.  Then I made corned beef hash (really tasty, but not on the diet).  I steamed some asparagus and threw in some leftover brussels.  Yes, my kids eat brussels, but only a few!

Pizza Friday

Many of you know that we eat pizza EVERY Friday.  Without fail.  Well, it just got a bit healthier. 

Here is my latest creation... store bought frozen cheese pizza topped with fresh baby kale, crimini mushrooms and raw (thinnly sliced) garlic.  Bake for 12 minutes at 400 degrees. 
It's amazing!
